Resumen:	Este proyecto tiene como objetivo la realización de un estudio de factibilidad para la apertura de una trattoria en el municipio de La Mesa-Cundinamarca. El estudio se ha presentado por la gran apertura turística que ha tenido el municipio en los últimos años donde hay una escasez de variedad en los platos de comida que se venden en la región. La necesidad de encontrar un plato diferente, elaborado de una manera artesanal, con una excelente calidad y ofreciendo una experiencia diferente complementaria a la experiencia acogedora que ofrece ya el municipio. Se llevaron a cabo varios estudios, de los cuales resaltamos el estudio de mercado, ya que gracias al pudimos determinar si en el municipio habría una acogida positiva para la apertura del restaurante, saber si estaban interesados en la comida que se ofrecería en él y para determinar el perfil de cliente al cual queremos llegar. Seguidamente en el estudio técnico se puede resaltar la cantidad de platos que se deberán realizar para atender las necesidades de estos clientes, las fichas técnicas de los productos a vender y se determinó la capacidad necesaria para ello.
Abstract:	This project aims to carry out a feasibility study for the opening of a trattoria in the municipality of La Mesa-Cundinamarca. The study has been presented because of the great tourist opening that the municipality has had in the last years where there is a shortage of variety in the dishes of food that are sold in the region. The need to find a different dish, prepared in a traditional way, with an excellent quality and offering a different experience complementary to the welcoming experience that the municipality already offers. Several studies were carried out, of which we highlight the market study, since thanks to it we were able to determine if there would be a positive reception in the municipality for the opening of the restaurant, to know if they were interested in the food that would be offered in it and to determine the customer profile that we want to reach. Then in the technical study we can highlight the amount of dishes that should be made to meet the needs of these customers, the technical specifications of the products to be sold and we determined the capacity needed to do so.
