Resumen: | Este documento presenta, como objetivo principal, realizar una revisión literaria sobre los beneficios para los pequeños caficultores al producir variedades de cafés especiales que les permita tener participación en un mercado internacional a través de diferentes estrategias, una de ellas es la implementación de certificaciones a nivel nacional que maneja la Federación Nacional de Cafeteros el ente de acopio más grande del país, otra de ellas es aplicar a aquellas certificaciones internacionales que permiten el ingreso a países desarrollados con un incremento por el consumó de café especial, además se exponen los beneficios que trae para los pequeños caficultores producir cafés sostenibles tanto social, ambiental y económicamente que es uno de los fundamentos de los cafés especiales, se exponen algunas estrategias de los líderes de cafés especiales que se basan en el control de todos los procesos de la cadena de valor del café a través de buenas prácticas agrícola (BPA), buenas prácticas de manufactura (BPM), sistemas de gestión de calidad (SGC) o manejo de controles internos que permitan la mejora continua con un respaldo de su trazabilidad, |
Abstract: | This document presents, as its main objective, to carry out a literary review on the benefits for small coffee growers when producing varieties of special coffees that allow them to participate in an international market through different strategies, one of them is the implementation of certifications at the national level managed by the National Federation of Coffee Growers the largest collection agency in the country , another is to apply to those international certifications that allow entry to developed countries with an increase by the consumption of special coffee, in addition the benefits it brings for small coffee growers to produce sustainable coffees both socially, environmentally and economically that is one of the foundations of special coffees, are exposed some strategies of the leaders of special coffees that are based on the control of all the processes of the value chain of the through good agricultural practices (BPA), good manufacturing practices (BPM), quality management systems (GSCs) or internal control management that allow continuous improvement with a backing of their traceability, |
