Resumen: | Colombia es el tercer productor más grande de café en el mundo, durante el proceso de producción se generan importantes cantidades de residuos, se estima que solo el 5% de la masa del fruto termina convirtiéndose en una taza de café; la pulpa es por mucho, el principal residuo de esta industria ya que representa el 43.2% del fruto en base húmeda, su inadecuado manejo y disposición es responsable de la contaminación en ríos y suelos a lo largo de toda la geografía nacional; dependiendo el nivel de maduración del grano es posible obtener sustancias como la clorofila, los carotenoides y las antocianinas, las cuales pueden ser empleadas como pigmentos y colorantes en diferentes industrias. |
Abstract: | Colombia is the third largest producer of coffee in the world, during the production process significant amounts of waste are generated, it is estimated that only 5% of the mass of the fruit ends up becoming a cup of coffee; the pulp is by far the main residue of this industry since it represents 43.2% of the fruit on a wet basis, its inadequate handling and disposal is responsible for contamination in rivers and soils throughout the entire national geography; Depending on the level of maturation of the grain, it is possible to obtain substances such as chlorophyll, carotenoids and anthocyanins, which can be used as pigments and dyes in different industries. |
