| Resumen: | La presente investigación tiene como base la identificación de los impactos negativos generados por la producción de panela en Cundinamarca y las actividades que los ocasionan; con el objetivo de proponer estrategias de producción más limpia que mitiguen dichos impactos, beneficien la productividad de los trapiches paneleros, y que adicionalmente, sean reconocidos por medio de certificaciones ambientales, como el certificado de panela orgánica que permite que los productores se abran camino al mercado exterior. |
| Abstract: | The present investigation is based on the identification of the negative impacts generated by the production of panela in Cundinamarca and the activities that cause them; with the objective of proposing cleaner production strategies that mitigate said impacts, benefit the productivity of the sugar mills, and that additionally, are recognized through environmental certifications, such as the organic panela certificate that allows producers to make their way to the outside market. |
