Resumen:	El lean manufacturing se enfoca en minimizar los desperdicios del sistema mediante el uso riguroso de los recursos para maximizar las actividades que crean valor hacia el cliente. El desarrollo del presente trabajo de investigación se analiza sobre el sector alimenticio debido al proceso de su sistema productivo, la perecebilidad de los productos y la forma de generar valor agregado en las diferentes organizaciones por medio de la metodología lean.
Abstract:	Lean manufacturing focuses on minimizing system waste through the rigorous use of resources to maximize activities that create value for the customer. The development of this research work is analyzed on the food sector due to the process of its production system, the perishability of the products and the way of generating added value in the different organizations through the lean methodology.
