Resumen: | Colombia es el tercer país con mayor producción de café en el mundo. Durante el proceso de limpieza de la semilla de café solo se usa el 5% del fruto, dejando como desperdicio el 95% restante que este compuesto por mieles, pergamino y cascarilla. La cascarilla compone el 44% del grano, al ser desechada de manera inadecuada se convierte en un potencial contaminante de las fuentes hídricas cercanas a las zonas cafeteras. Este residuo de café tiene propiedades nutricionales, tales como grasas, fibra, proteínas, nitrógeno, potasio y polifenoles, por lo que da un buen aporte a la industria de cerveza y alimentos. |
Abstract: | Colombia is the third country with the highest coffee production in the world. During the coffee bean cleaning process, only 5% of the fruit is used, leaving the remaining 95% as waste, which is made up of honey, parchment and husk. The husk makes up 44% of the grain; when it is disposed of improperly, it becomes a potential contaminant of water sources near coffee growing areas. This coffee residue has nutritional properties, such as fats, fiber, proteins, nitrogen, potassium and polyphenols, which is why it provides a good contribution to the beer and food industry. |
