Resumen: | En la actualidad, la gestión inapropiada del aceite de cocina usado (ACU) representa una problemática ambiental significativa. El uso inadecuado de los ACUs no sólo ocasiona afectaciones al medio ambiente, sino que también repercute en la salud humana a causa de enfermedades cancerígenas (Villabona, Iriarte, & Tejada, 2017). Este residuo, cuando es desechado incorrectamente a través de sistemas de alcantarillado o depositado en el suelo, provoca impactos ambientales y económicos desastrosos. La falta de comprensión sobre el valor del ACU agrava esta situación, con peligros adicionales como la formación de acrilamidas debido a las transformaciones fisicoquímicas por las altas temperaturas a las que el aceite ha sido sometido (Restrepo, 2012). |
Abstract: | Currently, inappropriate management of used cooking oil (CUO) represents a significant environmental problem. The inappropriate use of ACUs not only causes damage to the environment, but also has an impact on human health due to carcinogenic diseases (Villabona, Iriarte, & Tejada, 2017). This waste, when improperly disposed of through sewage systems or deposited in the ground, causes disastrous environmental and economic impacts. The lack of understanding about the value of ACU aggravates this situation, with additional dangers such as the formation of acrylamides due to physicochemical transformations due to the high temperatures to which the oil has been subjected (Restrepo, 2012). |
