Resumen: | El presente proyecto se basó en el análisis comparativo de consumo de sustrato, crecimiento celular y producción de alcohol de la levadura Saccharomyces Cerevisiae tipo Safale S-04, en el medio de cultivo mosto cervecero durante la fermentación de 1 L de cerveza artesanal tipo American Pale Ale a nivel laboratorio. El proceso de foto-fermentación se realizó en un fotobiorreactor tipo fermentador con volumen de 1, 343 L. El fotobiorreactor se construyó en acrílico transparente y se adecuó a un modelo de iluminación con fuente de luz LED el cual obtuvo una iluminancia promedio de 65000 Lux. La fermentación en ausencia de luz se llevó a cabo en un frasco de vidrio de borosilicato con capacidad de 1 L. |
Abstract: | The present project based a comparative analysis of sugar substrate consume, cell growing and alcohol production of yeast Saccharomyces cerevisiae type Safale S-04, at culture medium beer must during the fermentation of 1 L of craft beer type American Pale Ale at laboratory level. The photo- fermentation process was performed in a fermenter type photobioreactor whit volume of 1 L. The photobioreactor was built in transparent acrylic, dissuaded, and adapted to fit to an LED light source model, which obtained an average illuminance of 65000 Lux. The fermentation in the absence of light was carried out in a glass bottle of boron-silicate whit a capacity of one liter. |
