| Resumen: | En los últimos años el consumo de papa ha estado en auge, convirtiéndose en uno de los cultivos más importantes a nivel mundial. Así mismo, la generación de residuos que produce este tubérculo es preocupante debido al poco manejo que se les impone. Esta investigación profundiza en la reutilización que se le puede dar a la cáscara de papa teniendo como objetivo principal la extracción de compuestos con actividad antioxidante que hacen parte de este residuo, los polifenoles. |
| Abstract: | In recent years, potato consumption has been on the rise, becoming one of the most important crops worldwide. Likewise, the generation of residues produced by this tuber is worrying due to the little management that is imposed on them. This research delves into the reuse that can be given to the potato skin, with the main objective being the extraction of compounds with antioxidant activity that are part of this residue, the polyphenols. |
