Resumen: | El objetivo principal del presente trabajo de grado es demostrar que una biopelícula a base de alginato de sodio permite alargar la vida poscosecha de un fruto tan delicado como lo es la fresa a través del método casting para la elaboración de la biopelícula. Para la elaboración de la biopelícula se combinó alginato de sodio con otros polímeros naturales como pectina y aloe vera. Las películas se formularon variando la relación alginato – aloe vera y alginato – pectina de 80:20 a 50:50, se añadió glicerol como plastificante en concentraciones de 2 y 5% v/v. Las películas formadas se caracterizaron mediante pruebas fisicoquímicas como solubilidad, porcentaje de humedad y el peso soportado por cada membrana. |
Abstract: | The main objective of this degree project is to demonstrate that a sodium alginate-based biofilm can extend the postharvest life of a fruit as delicate as strawberries through the casting method for the production of the biofilm. To make the biofilm, sodium alginate was combined with other natural polymers such as pectin and aloe vera. The films were formulated varying the alginate - aloe vera and alginate - pectin ratio from 80:20 to 50:50, glycerol was added as a plasticizer in concentrations of 2 and 5% v/v. The formed films were characterized by physicochemical tests such as solubility, moisture percentage and the weight supported by each membrane. |
